- · 2 tbsp. sugar
- · 6 tbsp. of water
- · 1 tbsp. rice vinegar
- · 1 tbsp. white or yellow miso Shrimp Mushroom Stir-fry
- · 2 green onions
- · 1 tbsp. of minced ginger
- · 1 lb. shrimp
- · 4 cups of broccoli
- · 2 colored bell peppers
- · 3 tbsp. olive oil
- · 4 ounces mushrooms
METHOD
Step 1: Veggies and Stir Fry Sauce
For the stir-fry sauce, combine the ingredients to achieve a smooth consistency.
Next, destem and slice the mushrooms, make slender slices of the bell pepper, and then roughly chop the broccoli.
Step 2: Preparation
Toss the mushrooms, bell pepper, and broccoli into a hot saucepan with some oil, then cook until tender—season with salt and pepper.
This will take approximately 6 minutes. Set aside the vegetables. In the same pan, drizzle some oil, add the green onions, and cook the shrimp. Before they turn opaque, flip them.
Step 3: Serving
Add the sauce and vegetables, then cook until the sauce is thick.
Serve hot with rice or noodles.
